GEVULDE PAPRIKA’S MET COUSCOUS EN GROENTEN

Ingrediënten
- 2 paprika’s
- 1 ui
- 120 gr. couscous
- 180 gr. erwten (of kikkererwten)
- 8 gedroogde tomaten in olie
- 2 el pijnboompitten
- 3 el olijfolie
- 6 el gehakte peterselie
- Peper en zout
- 3 el groentebouillonpoeder
Stap voor stap instructies
Stap 1
Snij de paprika’s doormidden en verwijder de zaadjes
Snij de ui
Snij de gedroogde tomaten in kleine stukjes.
Spoel de erwten af en laat ze uitlekken.
Stap 2
Rooster de pijnboompitten in een pan met antiaanbaklaag zonder vet.
Stap 3
Blancheer de paprika’s 5 tot 10 minuten in kokend water en laat ze uitlekken.
Stap 4
Giet de couscous in een kom, voeg de groentebouillon toe en giet er kokend water over. Laat 15 min. zwellen. Roer met een
vork door de couscous zodat deze niet meer aan elkaar plakt.
Stap 5
Verhit de olijfolie in een koekenpan en fruit de uien op laag vuur. Breng op smaak met zout en peper.
Stap 6
Meng de couscous met de ui, gedroogde tomaten, erwten en peterselie. Breng op smaak met zout en peper. Vul de paprika’s met dit mengsel. Bestrooi met pijnboompitten.
